If you’re tired of the same old flowers-and-cards routine, we have the perfect sweet treat to make your special someone swoon. Splash Café Cake Pops aren’t your average desserts; they’re a party on a stick, bringing a sprinkle of fun to your holiday celebrations!
Start by making your favorite flavor cake. You can use a family recipe or box mix and bake it in any size or shape—just make sure it’s fully cooked as instructed. After baking, allow the cake to cool completely, wrap in plastic wrap, and place it in the freezer for 4-6 hours.
Once frozen, remove the cake from plastic wrap and tear or cut it into smaller pieces that can fit in your food processor or blender. Blend in small quantities until the cake has broken into smaller pieces, almost the texture of soil. Make sure not to over blend or the texture will be mushy.
Transfer cake to a large bowl or stand mixer and add in a small amount of frosting (e.g. for one 8-inch pan of cake, start with one tablespoon of frosting). Add frosting in small amounts while mixing with a stand mixer or your hands until the consistency resembles clay.
The dough should stick to itself and not to your hands very much. If it’s too sticky you might have added too much frosting, so work slowly. Return blended dough to the freezer to chill for a short amount of time.
Lay out parchment paper over a non-slip mat and place dough directly on paper. Cover with the second sheet of paper. This will keep the dough flat and prevent it from sticking to your rolling pin.
Roll out dough to 1/2 to 3/4 inch in thickness. Use a cookie cutter to cut out desired shapes (hearts, stars, circles, etc.) and place them on a baking tray or plate. You can also use a Cake Pop mold or a cookie scoop to keep it simple! Once you’ve formed all your Cake Pop shapes, place the tray in the freezer to solidify.
Once your cake bases are frozen, remove from freezer and set aside. Melt chocolate chips of any color in the microwave or on the stove. Please note, full chocolate bars need to be tempered to work.
Dip Cake Pop sticks in chocolate and insert them into each of your cake shapes, at least three-fourths of the way through. Return Cake Pops to the freezer to solidify before dipping (approx. 15 min).
Once frozen, begin dipping in chocolate. Make sure to tap off any excess chocolate before setting them on parchment paper to avoid runoff. Allow Cake Pops to solidify at room temperature. Don’t put them in the fridge or freezer because condensation will cause the chocolate to get wet.
Now it’s time to decorate! You can drizzle with extra chocolate and add sprinkles, or you can use chocolate in a piping bag to draw on words or shapes. Pro tip: Try using edible luster dust on dry chocolate to make them sparkle!
After you’re finished decorating you can individually wrap your Cake Pops or box them as a special gift. Give your Cake Pops out as Valentines to anyone with a sweet tooth—friends, family, significant others, your kids’ classmates, and even yourself!
